Mixed Greens Herbs Veggies and Nuts (Vegan, Gluten Free): Kale, swiss chard, sorrel, lettuce, arugula, cranberry hibiscus, holy basil, dill, gherkin cucumbers, green peppers, avocado, honey roasted mac nuts, mac nut cheese (vegan), topped with marigold flower petals.
Big Island Farms offers a Meal plan during their semester here. The Farm Forager Salad lends a clue to the beginning of exquisite cuisine experienced daily while living at the farm. In fact, we’d go as far to say that the culinary experience Farm Chef Michael Rodriguez-Reyes has cultivated is one of the best food experiences one can have on the Big Island of Hawaii. There is nothing more important than coming together and cherishing the nourishment that comes to all who work with the land at Big Island Farms. The harvesting, preparation, plating, serving, and eating becomes one as the art of living and culture, bringing everyone together. This can only be truly understood upon smelling, tasting, and sensing the difference of handcrafted fresh food straight from the land. Handmade sauces, salsas, pesto’s, herb blends, and dressings perfectly accompany the already fresh and lively natural ingredients from the garden, leaving many in disbelief… and coming back for seconds! This is more than just delicious healthy food, this is togetherness, laughter, and an absolute love of living.
Vegetarian, Vegan, Gluten Free? No Problem, our meal plan offers a seasonal menu that accommodates and special needs or wants.
Fresh greens such as arugula, butter head lettuce, and kale are all at hand’s reach. Herbs such as basil, fennel, and cilantro are used regularly in culturally inspired dishes. We offer 3 meals a day, Monday through Friday. Interns will have the opportunity in using our Farm to Table kitchen and have full access to our farms produce during their days off. Interns are encouraged to step into the kitchen and experiment.
Hands on food experience includes prepping, preparing, and cooking meals in a farm-established kitchen. Sanitation/cleanliness and proper cooling/heating will be taught to appreciate the importance of food safety. Foraging through our land for nature’s gift such as wild ginger, and wild berries is also a huge part of being resourceful and also using the land as much as possible for our kitchen needs. We are all created equally and should respect everyone’s love for food and personal beliefs.
Here at Big Island Farms we are strictly a Vegetarian farm but all are welcome!
Meals are unique and creative while focusing on optimal health and enjoyment. With connectivity to our neighbors, farmers, and local community we have built a venue for all to share in affordable Farm to Table food.
